o a modified gothic arch to crea

The Chef’sChoice® Model 15 (see Figur
e 1) is a three stage sharpener with 100% diamond
abrasiv

o sharpen and hone the edge, follow
ed in Stage 3

. Slip the knife
blade smoothly into the left slot betw
een the left angle guide of Stage 1 and the plastic
knife holding spring. Do not twist the knife
. Move the blade do
wn in the slot until you feel
it contact the diamond disk. Pull it to
wards y
ou lifting the handle slightly as you approach
the tip. This pr
actice pull will give y
ou a feel for the spring tension. Remo
ve the knife and
read the follo
wing instructions specific to the type of knife y
ou will be sharpening.

urn ON the po
wer and pull the length of blade thru the left slot (Figur
e 4) and then
thru the right slot of Stage 1, using the left and right slots on alternat
e pulls. (T
ake about
3-4 seconds for each pull of a 5” long blade
). The first time y
ou sharpen a European or
American knife it may tak
e up to 20 pair of pulls to fully r
e-angle the edge of a thin blade.
Thick
er blades will requir
e more pulls. Check for a burr as described below and c
ontinue
to mak
e more pulls if necessary to cr
eate a small burr along the entire length of the blade.
If you ar
e sharpening a contempor
ary Asian blade (which probably has been sharpened
pre
viously at 15 degrees) y
ou will find that only a few (1-2) pairs of alt
ernating pulls
(alternating left and right slots
) will be needed to dev
elop a burr
. Do not ov
er sharpen.
